Farm fresh apple cider that started spontaneously fermenting in the jug. I decided to just go with the wild yeasts and see how it would turn out. Definitely not as good as a cultivated saison yeast.
While up on Sauvie Island to pick up pumpkins for halloween, we grabbed 5 gallons of fresh pressed apple cider (veriety unspecified).
